I am loving this new way of meal planning. I schedule, and buy the ingredients for, a number of meals for the week without any designation as to which date they will be served. It is so liberating. For me, if I am on a schedule, I feel very pressured to stick with that schedule. If I planned a certain meal for dinner, even if I have plenty of leftovers available, I feel compelled to make that meal. But…. if I have a flexible meal plan I am content and happy to warm up those leftovers and enjoy away. Works great!

Breakfast
Spicy Shred: This is an all time favorite at our house and I like it because it is sooo simple and quick to make. I can also make a little or make a whole lot. Perfect!
Eggs and Sausage: Yep. Brown up some sausage (most stores have great breakfast chicken sausage) and then make your eggs as you like them. I would add avocado and start your day with some wonderful, good fat.
Chorizo and Eggs: My most favorite breakfast meal is chorizo and eggs. Good chorizo cannot be found at a regular grocery store as they add lots of fillers. Check out Whole Foods or your local meat guy for the good stuff. Brown the chorizo for a few minutes, then add the eggs right into the pan. Scramble together until everything is fully cooked. So good!!!
Pumpkin Cranberry Muffins: We’ve never tried these but they look delicious and perfect for a make-ahead breakfast. I will double the recipe to have enough for another meal as well.
Paleo Egg Muffins- Just like the regular muffins, these are perfect to be made ahead, to make a huge batch of, and even freeze for later. Can’t wait to try this simple recipe out!
Lunch
Leftovers! Our lunches consist of lots of LEFTOVERS!!! Might not sound glamourous but with the delicious food we make for dinner, lunch is just as delicious. It also makes it super easy while working, doing school, or just trying to keep the kitchen clean for a tiny bit of the day- to warm up leftovers! If we happen to not have leftovers available that day we always have salad of some sort available. That might be tuna salad, chicken salad, or a regular salad. Have a back up if needed… but enjoy those leftovers!
Dinner
Here’s where the fun and creativity happens! I am listing a few meals to put where you want for the week… and don’t forget about the weekend! We certainly don’t want to get to the weekend and not have anything ready and run off to a msg infested restaurant. Continue your plan even into the weekend and you’ll be prepared and ready for anything. Of course, if you make enough of these meals, they might last you way into the next week- what a great problem to have! All of the meats with these meals can be frozen up until the time you need them so don’t fret. Have the ingredients ready and know that you are more than prepared to feed your family healthy and delicious meals for the entire week.
Meatloaf Cake: Yes, I know. We just had this last week! I know, I know. Let me tell you. I LOVE this meatloaf. Last week I made a 3 pound meatloaf and we finished it off with super speed. I wanted more and I’m preggers and I’m going to get more! Ahem. So yes, we’re having it again. (It’s not just me, everyone else LOVED it too.)
Paleo Pizza: This is our last week of strict 100% paleo eating so to celebrate how well we’ve all done we are going to splurge and have pizza! We haven’t had pizza in a super long time and as that is something the kids miss, we are going to stuff our little faces with PIZZA!
Slow Cooker Salmon and Spinach: This recipe is off of my freezer meal list and looked so easy and tasty that I thought I would try it to eat the day of. How much more simple does “throw everything in the crockpot” get? I’m looking forward to it!
Slow Cooker Jambalaya: My kids were born and raised in New Orleans and their silly selves miss Jambalaya… A LOT. I am kind of nervous about this recipe and if it will stack up with the jambalaya they’re used to, but it’s worth a try. The slow cooker part has me sold! Make it with us and we’ll all be the judge.
And there you have it! We are prepared and fully stocked for a weeks worth of fantastically delicious meals!
