I have been looking forward to saying this for 15 days: We’re halfway there!!! Are you feeling a sense of accomplishment? We are! Check out our “halfway there update” for more details. Let’s just say, things are going really well! How are you doing? I would love to hear. I know that many of you are on a whole30 or eating strict paleo right along with us. Some of you have no idea what I’m talking about but are enjoying the recipes and have even tried a few. I am soooo glad!
We are celebrating our “halfway day” with 3 new recipes, all of which we ate today! Haha- I told you we love food!
Breakfast was a fun, simple and delicious one of Everyday Paleo’s apple muffins. We haven’t had these in a good year so they were like brand new again and sooo good. Definitely adding these to my after-baby menu.
Lunch was leftovers of dinner last night, my all-time favorite chicken curry. Need I say more? It was heaven in a bowl….
After lunch Shiloh made us a scrumptious snack. She has been feeling a little left out now that Jeremiah has been showing off his culinary skills in the kitchen as she sits back and watches. Today, snacks were her domain.
She made no-cook apple donuts that she as now named “Shiloh’s Deliciousness-es”. Pretty original, huh? No, we did not make these up as I’ve seen pictures circling the web like this one for a while. They are new to us and were a perfect treat. Recipe coming soon!
Jeremiah took over dinner and made us his much anticipated meal: “Tin Can Chili”! It. Was. So. Good. He even added a secret ingredient that made it all the more flavorful. Check out his recipe and make this crockpot meal asap!
Before we ate dinner Levi and I threw together some granola that I was crossing my fingers on, hoping for the best. Whew, did it work! This granola recipe was so good, so sweet, so easy and such a hit. Shiloh repeatedly and obnoxiously said, “This is the best healthy dessert I have ever had in my entire life!” Jeremiah and Levi practically needed a shovel they were stuffing it in their mouths so quickly and Brandon said it was perfect… and had another bowl. It really was amazing. We ate it as a dessert but it can be used any time of the day. I’ll say it again: It was SO good! You have to try this granola.
We made it through “hump day” and are on the downward track to the finish line! Everyone is feeling good, things are becoming more of a habit, Brandon is full swing into dish duty, I am full swing into prepping and cooking, and the kids are loving joining in on it all.
We are doing this 100% paleo month as a whole family and it couldn’t be going any better!
