This is my absolute simplest way to make chicken salad. It can be thrown together in a few minutes and is a great meal to take on the go. This is one of those light meals that I make a bunch of on Sunday and snack on throughout the week. Sometimes I need a bite of something flavorful and this hits the spot. I can throw some in a lettuce wrap, on an avocado, in a tomato, or simply on a spoon. Check it out. 
Here’s what you need:
3 lbs cooked, cooled and shredded chicken (about 1 whole chicken)
3 celery stalks, diced (optional)
4 tbsp relish or diced pickles
1 small box of raisins or 1 diced Apple (cranberries work great too if you’re okay with the extra sugar)
1 handful of sliced almonds (pecans are delicious here too)
1/4 cup homemade mayo
1 tsp salt
1 tsp pepper
Gourmet variations to add:
1 tsp dijon mustard
1 tbsp lemon zest
juice of half a lemon
Here’s what you do:
1. In a large bowl combine chicken, celery, raisins, almonds and mayo. Mix well.
2. Add in salt and pepper. Enjoy!
Variations:
1. Add in mustard, lemon zest and lemon juice. Enjoy!
