Day 16 Eats!

I spent a while today prepping, cooking, chopping, mixing, freezing and storing food for the next few days. Yes, it took some time, and a good amount of dishes (thankfully my trusty dishwasher, Brandon, cleans them for me), but I feel so accomplished to have a refrigerator full of great food for all different meals. Here’s the count:

-Cabbage and Sausage Stir Fry

-Chicken Salad

-Seasoned Okra

-Hawaiian Chicken

-Homemade Chicken Stock

-Serving sizes of fresh salmon bagged and frozen

and leftovers from yesterday’s breakfast:

-Eggs with Steak and Asparagus

-Salmon with Veggies

Oh, and homemade mayo.

Like I said, a fridge full and I love it!

For breakfast we had the cabbage and sausage and my kids gobbled it down. It is very light yet flavorful and delicious.

Lunch was the chicken salad and that’s always a big hit. Thankfully, there are plenty of leftovers for tomorrow.

Bet you’re wondering what the Hawaiian Chicken is. Well, that was dinner and it is every bit as good as it sounds. The sweetness of the mango and lemon makes this chicken irresistible. Here’s the recipe!
