Day 12 Eats!

At the beginning of the week we had steak at one meal and pork chops at another. With both we had a tiny bit of leftovers, and this, aides and gentlemen, is why I keep ALL leftovers. I cut up the meat into small bite-sized pieces and tossed it with cubes of butternut squash and sweet potatoes cooked in coconut oil. Dang. That’s all I can say. Dang. (I mean come on, look at the picture!)

Next time you have leftovers, be creative. You’ll be amazed at the delicious meals you can come up with!

Lunch was a weird combo but we’re kind of weird ourselves so it worked! We had a simple rotisserie chicken with a side of steamed veggies….with a side of cocktail shrimp. Perfection! 

Today is the opening ceremonies for the Olympics. Go Team USA!!! We don’t do a whole lot of “themes” around here but Jeremiah had the idea of celebrating the Olympics with our food, while we watch the ceremony. And celebrate we did!

Jeremiah, Shiloh and I put our heads together and came up with this fantastic and cute-as-anything meal. For our main meal we made homemade chicken wings that turned out unbelievably good.

To go along with our Olympic theme we made the “rings” of the olympics. It was so much fun to go shopping and figure all this out. Believe me, we did a whole lot of compromising to get it right. Here’s the layout: Blue- blueberries, Black- dates and fudge bombs, Red- raspberries, Yellow- butternut squash (although they came out a bit more orange but we pretended), and Green- guacamole and cucumbers. Not only did it all taste great, the kids were so proud of themselves for thinking of it, participating in shopping for it, helping to cook and prepare it, and they ate it all with pride! Perfect meal to watch the Olympics with. Go Team USA!
