Spicy Shred

This dish has it all. Ease. Flavor. Texture. Spice. It is beyond simple and fast to make and can be made for 1 or for a big group, just as easily. We had this dish for breakfast but it is certainly a meal that can and will be enjoyed any time of the day.

Here’s what you need:

3 cups shredded chicken

4 large carrots, peeled and sliced

1 tbsp Hot curry powder  (Use a little less if you’re sensitive to heat. We love it!)

2 tsp pepper

1 tsp salt

2 tbsp coconut oil

Here’s what you do:

1. Heat 1 tbsp oil in pan on med heat.

2. Add carrots to pan and cook until golden brown, stirring as needed.

3. Add shredded chicken and 1 tbsp oil to pan and heat through.

4. Season with curry powder, salt and pepper and mix through.
