I realize I sound like a cheerleader stuck on repeat but….. Day 4 was a success! Haha, I crack myself up.
Although breakfast, according to my meal plan, was supposed to be Goose Egg Scramble we had to be creative. For the first time ever we were late to the farmers market and for the first time ever they ran out of sweet potatoes! Aaahh! Don’t worry, we survived…barely.
Thankfully we had leftover Sweet Potato Cinni-Mash so I joined that with leftover grilled squash and zucchini and eggs over easy. Looks so pretty, doesn’t it?

Unfortunately, my phone that’s-on-it’s-last-leg died during lunch so I wasn’t able to snap a picture of our meal. Here’s an oldie that is pretty much what we had. We ate lunch at Whole Foods and as usual ordered the hamburger without the bun. Here’s the difference: Whole Foods no longer makes sweet potato fries!!! Yes, I said it, it’s horrible! Now they make sweet potato “chips” covered in powdered sugar. Aaaaahhhhh!!!!! We ordered the chips (without the powdered sugar of course) and they were okay. I’m keeping my fingers crossed that they bring back my sweet potato fries!!! Okay…I’m done ranting.
Dinner was a new recipe that I was eager to try. I cooked up some Lemon and Garlic Dump Chicken and it came out really good and full of delicious flavor. I plated it with roasted cauliflower and broccoli and the combo worked great.
I will definitely be making the chicken again because we all loved the flavor. The combo of the garlic and lemon was superb. I think I’m going to try making it differently next time though. The skin of the chicken was still pretty soft, and I love crispy. I can either make this meal with skin-less chicken oooorrr I think I’ll try marinading the chicken for a while and then baking them on a roasting pan and getting them crispy that way. I’ll keep you guys posted how it comes out next time.
The funny, and very cool, thing is that Levi ate more than me! Levi can eat, we all know that, but if that first bite isn’t good he won’t eat anything else. Levi is the most hard headed child EVER and will completely refuse to eat if he sets his mind to it.
Imagine our surprise when he ate two and a half chicken legs and a massive amount of veggies! He just kept asking for more! I had a plate full of veggies on the table for whoever might want more. Levi kept asking for me to give him some so I cautiously gave him a couple of pieces at a time, over and over. Finally, Levi pulled over the whole plate of extra veggies and ate them all! We were blown away and pleasantly surprised at how well he ate. If you have a picky eater, try making this meal and see how it goes!
Yes, that is the face of a happy and full two year old!
So sure, we’re only on day 4 and there are 26 more days to go but….. we are all going strong, we are all eating well, we’re in the word together, we’re exercising and staying active, and we’re feeling better already. I have no doubt that we are going to not only do great for the full 30 days, but we are going to have drastic and wonderful life changes to show for it. Stay tuned!
Update: Levi woke up this morning and the first thing he said was, “I’m poopy and I want more chicken.” HAHA!



I know for a fact that Levi can and will eat anything! I love his saying when I ask, “How is it?”
