Monday brings us back to work, back to school, back to routine. Does it bring us back to boring food? Um…NO! No matter how “routine” of a day, our food is never routine. We had a great day of eating wonderful food that was wonderful for us.
We started our morning off wonderfully with the kid’s long awaited breakfast of breakfast pizza. Not only is it full of vitamins from the eggs, the protein, the veggies, and the fruit…but it tastes incredible too!

Lunch was leftovers of pork carnitas and it was just as yummy as the first day.

After lunch Jeremiah got a surprise phone call from Daddy letting him know he was taking Jeremiah, and a friend and his dad, to the Hornets v.s. Spurs game. Can you see the excitement radiating from Jeremiah’s face?!
So Daddy and Jeremiah rushed off to the basketball game, where my beloved Spurs won, and had a great father/son bonding time.

Shiloh, Levi and I had a wonderful dinner of spicy coconut shrimp with fried plantains. Fish and chips!
Not only did I love this meal, my kids LOVED this meal and ate until their stomachs were packed to the brim.
After being a family that lived on chicken nuggets and fries, going to meals that always need forks and knives, it was really fun to have a finger-food meal.
Levi, couldn’t get enough!
I squeezed a little extra lime juice on mine and ate shrimp like a crazy person until they were all. Pure deliciousness!!!
