I LOVED having a meal plan last week.
I didn’t follow it to the T but that wasn’t the point. The point was that I knew I had all the ingredients to make all of the meals I laid out in my plan. I knew that I could pick any one of those many meals to make and I didn’t need to go searching for a lost ingredient or call Brandon to pick something up on his way home. I was organized. I was prepared.
I purposefully did not schedule the weekend for that fact. It’s the weekend. Weekends at our house never end up going the way we plan. For instance, on Friday I remembered that I had a baby shower on Sunday. Happens to me all the time! So I leave it open for life to happen. We still eat GREAT of course, it’s just not planned out.
During the week is a different story. We NEED a plan. Most mornings my spiel to the kids starts with “And today’s plan is…”. Seriously. We need a plan. So I am, yet again, making a meal plan!
Last week I never got around to using half of my ground beef (score 1 for me!) so that will be at the top of my list this week. I also have some asparagus that I forgot to use so we need to cook that up soon too. I bought some kale at the farmers market on Saturday to make kale chips with so I plan on doing that asap. I have a running start and I’m going with it. Isn’t it all sounding so tasty?!!!
Monday:
Breakfast- Fried eggs and our favorite kabocha
Lunch- Wow. Let our lunch today be an example of why our family needs a meal plan. Check out our Day 9 Eats! It’s pretty bad.
Dinner- Turkey tacos with coleslaw
Tuesday:
Breakfast- Egg, spinach and pineaple scramble
Lunch- Cabbage and pork stir fry
Dinner- Meatloaf with asparagus
Wednesday:
Breakfast- Veggie scramble with banana “yogurt”. You’ll see. It’s gonna be good!
Lunch- leftover meatloaf
Dinner- Spaghetti chili
Thursday:
Breakfast- Deviled eggs, pork and kabocha
Lunch- leftover chili
Dinner- Some sort of fish. Haven’t decided which kind yet, but I’m sure it will be super tasty!
Friday:
Breakfast- Veggie eggs with homemade breakfast sausage
Lunch- tuna salad with tomatoes
Dinner-
Saturday: (Since I will be out of town I need to plan ahead so that my family is well fed.)
Breakfast- Banana nut muffins
Lunch- Salads
Dinner- Chicken fajitas
