Sundays in our house always seem to start a little hectic. Before Whole30 and paleo we would throw some canned biscuits in our mouth and rush out the door to make it to church in time. Now that we know just how not-so-good those biscuits are, we sit down for a homemade breakfast on Sundays. (And everyday, obviously) This Sunday I knew that I wouldn’t be home for lunch so I quickly made the fam some turkey salad for lunch while making their breakfast of eggs, kabocha, and sausage. I realized as I was uploading my pics that this is a repeat of a repeat breakfast, but hey, it’s really good, it’s fast to make, and I have yet to hear any complaining!

Like I said earlier, I planned on being out for lunch. I was invited to help celebrate the impending birth of a dear friend’s baby. However much I wanted to be there, I also knew that I couldn’t expect to be well fed on Whole30 approved foods. So, what does an organized and prepared Whole30 mom do? Well…I brought my own food to eat….and for Shiloh…..and for Ayumi.
I knew there was going to be chicken salad at the shower so I made my own turkey salad with homemade mayo to match. I topped mine with half an avocado…of course! To complete our meal I did a little rummaging and found some leftover apples from the mens retreat so we cut those up as a wonderful addition. I also got a hold of some boiled eggs that our husbands were supposed to eat at the retreat but didn’t, so I made some quick deviled eggs with mustard. Brandon had some spiced nuts left over that Ellen (a fellow friend and wife of a Whole30er) had made so we enjoyed them for him. AS for my addition to the shower, I brought broccoli, cauliflower and carrots so we munched on those as well, along with some melon. We definitely all had full plates and were stuffed with food by the end of the shower. We did a great job and made it through what could have been a tempting lunch with flying colors! Kuddos to my sweet Shiloh who did a fantastic job eating, and enjoying, her Whole30 foods without a word of complaint. That’s my girl!

So, we ate lunch around 3 and the whole family was wanting to eat dinner a couple hours later. I was soooo not hungry and I despise cooking widen I’m not hungry but hey, what can a mom do? I rummaged through the fridge so see what needed to be cooked and I found chicken! I had defrosted chicken earlier to make chicken salad with but ended up using the leftover chicken from my clay pot adventures, so I had a bunch of chicken and nothing to do with it. To continue on my SIMPLE Sunday endeavor I cooked up some cinnamon sweet potato coins (they’re the latest favorite of the house) and chicken pieces with herbs de provence. My comfort food has always been fajitas so I decided that since I needed to eat, I was going to eat what I wanted. I grilled myself an onion, topped it with a little chicken, and voila… fajitas. I even planned well enough that I had some leftover sweet potatoes that I saved for a pre-workout snack for the morning. That’ll work!

We made it through a successful and SIMPLE weekend without any major glitches! We worshiped the Lord, we ate well, we feel good, we kept it low-key and relaxed. Doesn’t get much better than that. I pray that you had a wonderful Sunday as well and are feeling refreshed for the week ahead.
